Love raspberry try this KETO Raspberry Ketones

Life is too short to skip a slice of cake!  The Keto Lifestyle does not mean you must avoid having your sweet tooth satisfied.  This recipe will make your mouth water and your joy increase.  The frosting recipe is wonderful to add atop a chocolate cupcake as well.  The Youtube demonstrator uses grams and ccm NOT ounces.  These are the ‘Foodie OnKeto’ written instructions.  ENJOY the Youtube below the written instructions.

SHOP FOR INGREDIENTS have on hand and ready to blend

  1. Almond Flour
  2. Coconut Flour
  3. Baking Powder
  4. Unflavored Whey Protein
  5. Salt
  6. Xanthan Gum
  7. Stevia ( or your favorite sugar free sweetener )
  8. Real Butter
  9. Eggs
  10. Heavy Whipping Cream  (HWC)
  11. Philadelphia Cream Cheese
  12. Frozen Raspberries

STEP ONE add these amounts to a bowl

  • 250 gram almond flour ( 8.8 oz )
  • 40 gram coconut flour ( 1.4 oz )
  • 3 teaspoon baking powder
  • 40 gram unflavored Whey Protein ( 1.4 oz )
  • 1/2 teaspoon salt
  • 50 gram Stevia ( 1.76 oz )
  • MIX in a bowl by hand till all combine

STEP TWO add these amounts to a blender

  • 40 gram room temp butter ( 1.4 oz )
  • 5 large egg whites – blend THEN ADD:
  • flour mix from step one
  • 2 teaspoons vanilla extract
  • 180 ML ( 6 OZ) warm water (on transcript of youtube)
  • 180 ML ( 6 OZ) Heavy Whip Cream 
  • BLEND ALL TOGETHER FOR CAKE BATTER
  • Pour mixture into two round oiled cake pans – spatula to fit pan
  • BAKE at 180 C for 25 minutes (may vary according to altitude)

STEP THREE MAKE WHITE CREAMY FROSTING

  • 40 gram butter into blender with ( 1.4 oz )
  • 1 large package Philadelphia Cream Cheese
  • 40 gram Stevia ( 1.4 oz )
  • 1 teaspoon vanilla extract
  • 180 ML ( 6 oz) Heavy Whipping Cream (online abbreviation HWC)

IN A POT BOIL TOGETHER

  • 60 ML ( 2 oz ) warm water 
  • 200 gram frozen raspberries  ( 7.05 oz )
  • 30 gram Stevia ( 1 oz )- boil and crush berries in pot then add:
  • 1 teaspoon Xanthan gum and COOK for 2-3 minutes

READY TO FROST THE TWO LAYER CAKE

  • Gently pour and spread crushed berry mixture on bottom cake
  • Place 2nd cake on top and put in fridge to cool for 20 minutes
  • Spread frosting all over two tier cake to include the sides
  • garnish with fresh whole raspberries on top!
