6 strips of bacon cut in half – use scissors to make crispy bacon bits
1 bell pepper, 1 green onion, 6 avocados, 6 eggs
White or cheddar cheese ( your choice )
Chopped white onion
EASY DIRECTIONS – PRE-HEAT OVEN to 350 degrees.
NOTE: You will need a muffin tin (or) 6 avocados and cookie sheet:
Make up your bacon, then saute 1/4 cup chopped onion and 2 teaspoons of diced bell pepper in the bacon fat. ( I prefer red bell peppers ) Season to your liking with sea salt and pepper. Use stored bacon drippings to grease a toss away muffin tin or the inside of a halved avocado. Drop some cooked onions and peppers into the tin or avocado. Crack an egg into each tin or halved avocado. Top with your preferred cheese, shredded mozzarella, jack, cheddar. Bake @350 for 15-20 minutes. If you prefer a well cooked yolk leave it in 5 more minutes. Garnish with bits of green onion and bacon bits. NOTE: use tin foil on the cookie sheet for baked eggs inside the avocados.
