PBS Potato Salad

GOT potatoes? Got a bowl? Let’s get this party started! Simple ingredients all plant based!

2 lbs red potatoes + 1 Tbs salt – cover sliced potatoes with water and boil 12 minutes

After boiled, drizzle 2 tbls red wine vinegar + 1 tbs dry parsley

ALLOW POTATOES TO COOL AND CHOP OTHER INGREDIENTS

Chop 3 tbls of green olives + crushed cashew nuts “AIOLI” + 2 Tbs yellow mustard

Add 1/4 cup diced red onion + Add 1 tsp of green olive brine from jar  MIX and serve
