KETO Ghost Poo

Sounds ghastly, yet they are not deadly!  As Sherlock would deduce after investigation and trial, these fat bombs are wonderfully easy to whip up.   This Halloween treat can also be referred to as a “Casper” friendly Cheese Cake bite!  No marks will be found on the neck, however, a smile will form across the lips of all who indulge. For those KETO fans who might find themselves in a bowel bind, this recipe was lifted from Pintrest and strategically placed here as evidence for the KETO jury. Cream Cheese Clouds Cheesecake BitesGhost Poo aka a friendly “Casper” bite is a yummy way to grab a little sweet laxative, or snack.  The recipe below is basically a delightful frozen Cheesecake Bite. With a quick flight, or twirl to fluff about the mixing bowl, this Casper Cloud is surely to make a Ghostly squeal as the mixture is squeezed through a  Casper_the_friendly_ghost_by_mollyketty-d4jma99sandwich bag. Cut one of the end tips of a plastic bag off to make a home pastry bag.  For Christmas you can mix up red and green food coloring and perhaps a mint extract and name them “Jingle Bells”.  Ass some unsweetened cocoa powder, a bit of pumpkin puree, etc.  Make them for all the holidays! *KETO INDUCTION FRIENDLY*

INGREDIENTS:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
3/4 cup granular Splenda (or sweetener of choice)
1/2 tsp vanilla (or 1/4 tsp lemon and 1/4 tsp vanilla)  (Food coloring, chocolate, mint?)

imagesBeat everything with an electric mixer until fluffy.  Drop bite-size spoonfuls onto a wax paper-lined baking sheet to make 24 clouds.  Or spoon into sandwich bag, cut the tip off to make a pastry bag and squeeze out some “Casper” clouds, or Ghost Poo.  Freeze until firm, at least 1 hour.  Store in the freezer and eat frozen.

NOTE: Once frozen, these store in the refrigerator just fine.
