A simple, lovely solution is to make your own Mug of Wonderful to freeze and enjoy NOW or after the food fiesta! There are many variations depending on your pantry, but this is a basic MUG just waiting to be decorated by your taste buds!
INGREDIENTS FOR ONE MUG AT A TIME
2 tbl butter, one egg, 1/4 cup coconut flour, 1 tbl HWC (heavy whipping cream), 1 tsp vanilla, 1 tsp Stevia, 1/4 tsp baking powder. Crush some pecans or add healthy seeds you like.
EASY PEASY DIRECTIONS
Melt the butter in microwave for 15 seconds. Swirl melted butter around in the cup. Crack the egg into the mug. Stir with a fork. Add coconut flour and all dry ingredients, add vanilla and whip it. Depending on consistency, add 1 tbsp of heavy whipping cream, or a milk product that you use. Whip it all together then ZAP in microwave for 1 minute. Add topping of whipping cream, berries. IDEAS: drop a bit of sugar free chocolate shavings on top and let it melt! Add cinnamon and some walnuts. GO creative!
