Whole Foods and Plant Based WFPB – KEEP IT SIMPLE: Roast or steam vegetables in Instant Pot. Swirl em in a balsamic glaze or a tad of maple syrup.

Southwestern Pasta Salad – Except for the elbow noodles, no cooking required. Eight servings of WFPB. INGREDIENTS: 1 pound whole grain macaroni.
Zest of 1 lime, juice of 3 + 1 teaspoon chili powder
2 teaspoons toasted, ground cumin + 1⁄2 teaspoon sea salt, or to taste
3 Tablespoons minced garlic + 1 can of corn
2 cans blacked beans (rinse well)
1 yellow bell pepper + 1 med red onion finely chopped
1 cup cherry tomatoes, halved + 1 can of beets diced
1 ripe avocado, chopped –
