
What is Chimichurri? It is a luxurious condiment that is full flavor. A loose oil-based dip for chunks of skewered cheese with bacon bits. Restaurants offer sour dough bread to dip into Chimchurri. Like the picture above, in Argentina, they use it to baste their barbecued meat. Hand chopped parsley, garlic, onion gives it a loose oil based dip.

Using a food processor, the condiment is thick. A simple recipe to prepare 3 hours prior to serving. It can be prepared in advance and refrigerated for 24 hours. It is best served at room temperature.

Place all chopped goodies into a mixing bowl, then add the extra virgin olive oil. Let it sit for 2 hours.

1/2 cup finely chopped fresh curly parsley.
2 cloves of garlic.
1/4 red onion chopped.
1/2 tsp of red chili flakes.
1/8 tsp of oregano.
1 tsp of sea salt.
1/2 tsp of ground pepper.
1/2 cup olive oil. 🫒
3 tablespoons of red wine vinegar👌
