Baked zucchini tots dipped in marinara or white sauce

Need an appetizer to bring to a party or a crunchy ready made snack item?  Make a batch and use different dips for these cheesy zucchini tots instead of tater tots!

INGREDIENTS:

1 medium zucchini

2 eggs

1/2 cup crunched up bacon rinds

1 tsp salt + 1/4 tsp pepper + dash of garlic powder

1 cup shredded cheddar cheese

DIRECTIONS:

Preheat over to 400 F  220 C – spray a cookie sheet with PAM

  1. Grate zucchini then put in a hand towel, squeeze out liquid
  2. BOWL: stir in grated zuke, eggs, crunched up bacon rinds, salt, pepper, garlic powder and the shredded cheddar cheese. (according to taste add a bit of Zachery’s cajun spice instead of garlic powder)
  3. Roll up balls, place on sprayed cookie sheet.  Bake for 20-25 minutes till brown.
  4. Dip in marinara sauce, or a white sauce: Melt a 1/2 cup shredded mozzarella cheese, 2 tbsp sour cream and 1 tbsp butter in the microwave with a bit of pepper.

  1. 1. Keep it simple in the beginning. Eat the same thing or same meal to you get your kitchen KETOIZED. Eggs, bacon, cucumbers, hamburger, steak, salad etc.

    2. Take pics and/or try on clothes that are too small once a week instead of weighing. It took 30 days for the scale to budge, but inches were melting off.

    3. Don’t count calories (in the first 30 days). Focus on getting even fat and making sure your carbs are 20 or less. Get a carb manager just so you can determine carbs in ONE flour tortilla, ONE slice of bread, ONE….etc. BE proud of yourself for each small sacrifice to regain your health.

    4. Pay attention to how you feel! Take note of the new energy you gain and how good you sleep! I barely got a solid nite before I started this WOE.

    5. DON’T COMPARE YOUR JOURNEY TO OTHERS!! Some people drop a lot of weight quickly others don’t. Get your blood work done. Check estrogen progesterone, testosterone, thyroid, adrenals. Low levels of these essential elements dramatically affect your ability to regain optimum health. The chemistry of every body is different.

    6. Be prepared for people to think you are NUTS for eating so much fat. They have not done any research, but they offer their opinions based on the brain washing we all received from the FDA. Commit to KETO and stand by it based on your own RESEARCH. Just “DO IT” with confidence and your peers will witness your facelift, your body change, your energy level. Don’t push keto onto anyone. Shop differently and cook differently. Without GLUTEN, notice brain fog lifting, mood swings upwards, stiffness goes away, sleep is better, and the allergy season becomes a breeze.

    7. MOST IMPORTANT: Remember this is a journey. It’s going to take time. Enjoy the journey and don’t give up!
