WOW a bread that can be used to make French Toast or sandwiches! After making many KETO bread recipes, this one actually rises and slices nicely. Saturday bake day for a week supply of yummy bread! KETO FLAX BREAD 16 slices
DRY INGREDIENTS Bowl #1
1 tabl psyllium husk flour
1 tbsp coconut flour
3/4 cup almond flour
1 tbsp Whey Protein
2 tsp baking POWDER
¼ tsp Stevia
¼ tsp cream of tartar
2 tsp xanthan gum
1 tbls Flax seeds
WET INGREDIENTS small Bowl #2
¾ cup warm water (2 tsp yeast + 2 tsp honey) Add yeast and maple syrup (to feed the yeast) to medium bowl. Water to feel lightly warm to touch. Pour water over yeast mixture, cover bowl with a kitchen towel and allow to rest for 7 minutes. The mixture should be bubbly, (cold water won’t activate the yeast and too hot will kill it).
WET INGREDIENTS large Bowl #3
Once your yeast is proofed, add mixture into Bowl #3 with the eggs. Add cooled melted butter and vinegar. Mix with an electric mixer for a couple minutes until light and frothy. Add half the dry mixture Bowl#1, add sour cream, mix thoroughly to activate the xanthan gum, add the 2nd half of dry Bowl #1. Dough will become thick as the flours absorb the moisture.
¼ cup soft butter
¼ cup coconut oil
1 tablespoon apple cider vinegar
4 tablespoons sour cream
2 tsps honey or maple syrup

IMPORTANT TO SIFT 1/2 DRY INGREDIENTS INTO WET BOWL, then sour cream, then SIFT the other 1/2 od BOWL #1 dry ingredients into wet bowl #3.
Baking at 5,000 FEET altitude ensures a certain amount of the fluff to flatten after cooling. Less altitude means more volume. The yeast in keto bread ensures a wonderful texture and taste. Ingredients should be at room temperature, heavy cream, eggs, butter. Cold eggs will result in a flatter bread. Proof the yeast. Mix dry active yeast with water that’s just warm to touch with honey or sugar – mix for 7 minutes until foamy. Sugar ?? Yes, because yeast will feed on sugar to emit carbon dioxide, so it doesn’t affect the carb count at all. And yes, this is a scientific fact.
DIRECTIONS:
1) BOWL #1 DRY : psyllium flour + coconut flour + bake soda + Stevia (all dry stuff)
2) BOWL#2 WET : warm water mixed with yeast and honey or maple syrup
3) BOWL #3 WET: eggs, vinegar, sour cream, coconut oil, melted butter
3) SIFT DRY stuff into wet bowl #3. Add sour cream, coco oil, butter, then SIFT 2nd half of dry stuff. Use mixer to incorporate.
4) Whisk in 1 tbsp flax seeds.
5) Scrape bowl into baking pan sprayed with PAM

ADD FLAX SEED AND THEN POUR INTO PAN AND BAKE
BAKE 50 minutes @ 350 F / 175 C. LET COOL, then slice. Keep in fridge.
