Raspberry, Blueberry, Strawberry your choice

Got Bagel, Got Jam? This recipe can be made with any BERRY you prefer, just remember that all fruit berries have carbs too!  A teaspoon will go far to satisfy the craving for a sweet topping on a toasted bun, bagel or thumbprint cookie!  A quick and easy fast food jam is to simply WARM 1 tablespoon of Cream Cheese in Microwave for 5 seconds, then mash in one or two berries, sprinkle with Stevia, then spread on your toast.

Ingredients to make a Jar of Jam

  • 1 pound raspberries, fresh or frozen. 
  • 2 Tablespoons Stevia
  • 2 Tablespoons Sparkling water
  • 2 Tablespoons chia seeds
  • FIRST: Add chia seeds to sparkling water and let them puff up.

Instructions to make one 8 oz Jar of Jam

  1. Add berries and Stevia to saucepan over medium heat.

  2. Stir continuously as they soften and break apart to a slow boil
  3. Use a potato masher or fork to break them up even more.

  4. See bubbles break the surface? then add the chia seeds.
  5. The chia seeds adds texture, fibre, protein and healthy Omega-3 fats.
  6. Stir over low heat for 15 minutes,  then remove the pan from the stove. 7501

  7. If you enjoy jam with small chunks of fruit in it, then you’re done! Simply pour the mixture into a mason jar and cover it tightly with a lid.  The chia seeds need a bit of time to puffin up. Let the jam cool to room temp, then place jar in the fridge for a few hours and it will achieve the perfect texture.  It keeps in the fridge for about 14 days.  Without preservatives, it must be in the fridge.
