The KETO BAGELS are amazing, however, this morning I thought I would bake a bundt cake using bagel ingredients! A simple tweak to the recipe: add some real butter, Stevia, Vanilla and top it with pecans. After baking, simply turn it upside down and spread a sweet cream cheese icing for a ZING to your day! A slice of heaven for only 3 net carbs per slice. NO GUILT even topped with whipped cream! GET CREATIVE with any recipe found on the internet, make it yours!

A Three Bowl Recipe for the Bundt Cake
#1 Bowl – Beat 4 eggs and 1/4 tsp Xanthum gum, 1 tablespoon vanilla
#2 Bowl – in a glass bowl melt one 14 oz / 400 g / 1 1/2 cups of shredded mozzarella cheese. Nuke in microwave for one minute, stir, then add 1 tablespoon vanilla extract, nuke again for 30 seconds then stir, nuke for 30 secs more and stir.
#3 Stand Mixer Bowl – add 1.75 cup almond flour + 1/2 cup coconut flour + 1/4 teaspoon baking soda + 2 tablespoons Bake Powder – Mix on low, then add bowl #1 eggs mixture, mix on low, then add bowl #2 cheese mixture. Mix on medium, then high to get all ingredients blended. Scrape bowl with a spatula dipped in coconut oil so that all the batter is loosened from the mixer bowl. Then run coconut oil on your hands to pick up dough and place into bundt pan, press it into pan with hands, then push in a round of pecans. (They will end up inside the bottom of the bread/cake)

Rich, moist, and pecan crunch. Be decadent, squirt your slice with whip cream!
BAKE at 400 degrees / 270 C for 20 minutes. IMPORTANT: Spray the bundt pan with oil, before you rub your hands with coconut oil to avoid a slippery mess in your kitchen

A Bagel Bundt Bread – just slice it and make toast, or a tuna melt sandwich.
Let it cool before flipping it over. Slice it up and freeze some. The icing recipe is below.
ICING MIXTURE
Use hand mixer to blend 1/2 cube of Philadelphia cream cheese + 1 Tablespoon Stevia + 1 tablespoon Vanilla extract + 2 tablespoons heavy whipping cream. Smooth it on the top and use chipped almonds for garnish.

HOT out of the oven – smear butter on it , keep it moist. Enjoy it without the icing!
Home Made Jam for Bagels – or bundt cake.
FIRST: Warm 1 large tablespoon of Philadelphia cream cheese in microwave for 5 seconds.
SECOND: Cut up a large strawberry into itty pieces and smash into warmed cream cheese.
THIRD: Smear on top of a toasted KETO Bagel or KETO cup bread or bundt cake
