Pineapple Pork Pot

With foodie guests coming for dinner, this sweet, savory pork dish has a tropical burst of flavor which will be served with sweet potatoes or choice of brown rice. Mint jelly on table as garnish. It takes just five minutes to prep the pork before sliding a sizzling brown roll into your crock pot. This fall apart juicy slice of pork is packed with protein. With only 5 ingredients and 5 minutes in the kitchen, you can spend some creative time to select just the right islander music and table setting! GOT: Pork, Pineapple, Bacon, soy sauce.

PREPARE MEAT: Rub pork loin with a pinch of “Montreal Steak Seasoning” and in Mexico I used a tsp of “Asia Sazonador” (sweet ginger and garlic spice) a couple of squirts of liquid Stevia. Add 1/4 cup soy sauce, 1/4 cup olive oil and marinate.

MARINATE OVERNIGHT. Pour juice from zip loc into crock pot then fry up half a slab of bacon cut into bits. BROWN pork in bacon drippings. Dump bacon bits into pot. After browning marinated pork in bacon drippings and a tad of coconut oil, dump pork into pot. Add 1/2 cup water to fry pan, swirl and then dump into crock pot.

CROCK POT: Dump pineapple chunks and juice from one can in with bacon bits, pork and the juice from the fry pan. Cook on low for 3-4 hours depending on size of pork Loin.

Serve on a bed of mashed sweet potatoes – or for a dirty carnivore, brown rice, garnish with parsley. Serve with mint jelly.
