Tex-Mex Chili

Enjoy all that our Lord provided for our visual and tasting pleasure! Consider all the color, and the wonderful taste buds He gave us! Dirty Carnivore or Kinda Keto, this Tex-Mex Hump Day meal is a break from both. Use premium Angus beef and bacon when creating your people pleasing crock of meaty chili! This spicy chili is lodged here as a blue ribbon winner! Don’t be afraid to ADD your favorite spices! Our Mexican neighbor Francisco approved!

1 Package of 5 Angus Hamburger patties from Poncho’s
1 Package dry Pinto Beans from Poncho’s

 1 jar Pace Picante Sauce

1 jar Stonewall Chili Starter

1 can Hormel Chili

1 package Oscar Meyer bacon

 1/2 bunch cilantro diced

1 tablespoon minced Garlic from Costco

1 Tsp Pepperoncini flakes

1/4 Tsp Red Can chili powder

1 white onion

1 Tbls Montreal Steak Seasoning (on browning hamburger)

*Add cilantro for the final 15 minutes of percolating your crock of chili!

Play music while in the kitchen and LAUGH at the days to come

DAY ONE: Soak pinto beans overnight. DAY TWO: Drain beans, place in crock pot. Pour in Chili Starter, Pace Picante, diced onions, then fill crock pot with water to cover beans. Add Pepperoncini + Chili Powder. Cook bacon till crispy. Pour bacon grease into hamburger browning pan. Brown the burger meat and add to crock pot. SAVE cooked bacon to drizzle bacon bits on top when serving. Let crock pot percolate on low for 3 hours. After 3 hours on low, add chopped cilantro, Simmer on low for another hour. Taste and add more chili powder if needed. NOTE: Chop up a poblano pepper and orange jalapeno to serve on the side for any of your daring Mexican guests who may require extra heat to add to chili.

Serve with diced onions, shredded cheese, avocado, sour cream and chopped jalapeno.!

Use different ingredients and feed a crowd! Perfect Hot Mexican chili goes well with sweet potato fries, BBQ hamburgers off the grill.  From MEXICO with LOVE TO ALL – It is well within our soul when we praise God and give Him all the glory as we use the gifts He gave us.
