2 cups HWC + 2 tsp vanilla flavoring
14 oz full fat coconut milk
¾ cup Erythritol ( Xylitol another sweetener for ice cream)
¼ tsp salt
¼ tsp Xanthan gum
1 tbls rum or vodka (makes ice cream scoop easy)
OPTIONAL: Chopped nuts, sugar free chocolate chips, Banana extract, mint etc.
DIRECTIONS: #1 BOWL: 2 cups of HWC – whip to soft peaks then add 2 tbsp vanilla
#2 BOWL: 14 oz coconut milk + ¾ cup Erythritol + ¼ tsp salt + sprinkle in ¼ tsp Xanthan gum. MIX WELL then COMBINE both bowls. NEXT add 1 tbls rum or vodka, mix well to a smooth tasty texture. NOW take freezer part of ice cream maker out of the freezer. Pour mixture into ice cream maker. Insert mixer hand with round part up. Put lid on. Turn on for 20 minutes. Add walnut, almond chips through opening, churn for additional 2 minutes. Spoon ice cream into the little freezer cups with caps from Amazon.
