Split Pea Pot

Rainy day or not, you can cook up a pot of Split Pea Soup in an instant pot in 45 minutes, or in a crock pot in 2 hours. Either way you can freeze portions for later, or invite neighbors over for a cup with a fresh salad. KETO is as easy as we make it. Foods on hand always keep us from failing.

1/4 cup of extra-virgin olive oil 

1 bunch of green onions chopped 

1 medium white onion

3 carrots, peeled and cut into thin rounds 

3 stalks celery, thinly sliced  

1 tbls of minced garlic, minced

Use salt and pepper according to your taste buds.

1 pkg pre-washed and soaked dried green split peas

1 cup chunky diced ham or precooked bacon  

1 tbls thyme seasoning + 2 bay leaves 

4 cups low-sodium chicken broth 

2 tbls lemon Juice

Add ALL ingredients to INSTANT POT and stir. Lock lid and set pot to cook at high pressure for 20 minutes. When finished, carefully turn the steam valve to the venting position to release the pressure. Season to taste each bowl as you serve. Sprinkle fresh thyme or anything green (onions) on top and a drizzle of oil. ENJOY
