This Sweet Spud Casserole is much like a Sweet Potato Souffle, however, this sweet dish is much fluffier and creamier! With so much to be thankful for in 2021, why not serve this up for thanksgiving, birthdays, anniversaries and Christmas! A traditional American dish placed before your guests, this dish will conjure up thanksgiving for all that God has done and is currently doing behind the scenes, and in heavenly places! As we give thanks for a break from any diet, let your taste buds celebrate as you indulge the sweetness of each day!
A Sweet Potato Pie is also a favorite, simple ingredients for both. For the casserole you will need at least 4 good sized sweet potatoes, brown sugar, eggs, pecans, butter, milk, vanilla extract, cinnamon, salt and almond flour. The directions are easy and the desired thanksgiving dish will not disappoint!
Turn on the over to 350 F or 190 C – FIRST: toast two cups of pecans spread out on a cookie sheet lined with baking paper for three minutes. SECOND: To cut down on time, peel and slice the sweet spuds before boiling for 15 minutes. Drain then mash by hand or use a mixer. THIRD STEP MAKE SOFT CRUMBS: While spuds are boiling, add 1/2 cup brown sugar + 1/4 cup butter + 1 teaspoon cinnamon. Stir together until soft crumbs are formed. . (set aside) FOURTH STEP MAKE PECAN TOPPING: In another bowl prepare pecan topping: 1 cup toasted and chopped pecans + 2 tablespoons almond flour + 2 Tablespoons brown sugar + 1/4 cup melted butter. (set aside) FIFTH STEP: In big bowl add: 3 pounds of mashed spuds + 1/4 cup brown sugar + 1 cup chopped pecans + 2 eggs slightly beaten + 1/2 cup coconut milk + 1/4 cup melted butter + 1 tsp vanilla + 1 tsp cinnamon + 1/2 tsp salt. ASSEMBLY: Spray your baking dish then spread a layer of the mash with spatula evenly across dish, then sprinkle SOFT CRUMBS across mash, then spread the rest of the mash across SOFT crumbs. NOW sprinkle PECAN topping across top of casserole. Add 1 cup of mini marshmallows. IF you wish to save calories, skip the marshmallows. BAKE for 30 minutes and serve warm. TO ensure marshmallows do not burn, place tin foil over as you bake. IF taking to a potluck, place prepared casserole in the oven of the HOST to ensure that it gets served HOT.
