Sweet Spuds

This Sweet Spud Casserole is much like a Sweet Potato Souffle, however, this sweet dish is much fluffier and creamier! With so much to be thankful for in 2021, why not serve this up for thanksgiving, birthdays, anniversaries and Christmas!  A traditional American dish placed before your guests, this dish will conjure up thanksgiving for all that God has done and is currently doing behind the scenes, and in heavenly places! As we give thanks for a break from any diet, let your taste buds celebrate as you indulge the sweetness of each day!

A Sweet Potato Pie is also a favorite, simple ingredients for both. For the casserole you will need at least 4 good sized sweet potatoes, brown sugar, eggs, pecans, butter, milk, vanilla extract, cinnamon, salt and almond flour. The directions are easy and the desired thanksgiving dish will not disappoint!

Turn on the over to 350 F or 190 C – FIRST: toast two cups of pecans spread out on a cookie sheet lined with baking paper for three minutes. SECOND: To cut down on time, peel and slice the sweet spuds before boiling for 15 minutes. Drain then mash by hand or use a mixer. THIRD STEP MAKE SOFT CRUMBS: While spuds are boiling, add 1/2 cup brown sugar + 1/4 cup butter + 1 teaspoon cinnamon. Stir together until soft crumbs are formed. . (set aside) FOURTH STEP MAKE PECAN TOPPING: In another bowl prepare pecan topping: 1 cup toasted and chopped pecans + 2 tablespoons almond flour + 2 Tablespoons brown sugar + 1/4 cup melted butter. (set aside) FIFTH STEP: In big bowl add: 3 pounds of mashed spuds + 1/4 cup brown sugar + 1 cup chopped pecans + 2 eggs slightly beaten + 1/2 cup coconut milk + 1/4 cup melted butter + 1 tsp vanilla + 1 tsp cinnamon + 1/2 tsp salt. ASSEMBLY: Spray your baking dish then spread a layer of the mash with spatula evenly across dish, then sprinkle SOFT CRUMBS across mash, then spread the rest of the mash across SOFT crumbs. NOW sprinkle PECAN topping across top of casserole. Add 1 cup of mini marshmallows. IF you wish to save calories, skip the marshmallows. BAKE for 30 minutes and serve warm. TO ensure marshmallows do not burn, place tin foil over as you bake. IF taking to a potluck, place prepared casserole in the oven of the HOST to ensure that it gets served HOT.

“Give thanks in all circumstances; for this is God’s will for you in Christ Jesus.” 1 Thessalonians 5:18. “I will give thanks to you, Lord, with all my heart; I will tell of all your wonderful deeds.” Psalms 9:1 Splendidly assembled, well done Holy Spirit, thank You for blending the beauty of all God’s sustenance with Thy Word so that we enter into the holy Presence of our Creator. Every day we are blessed with His immense favor as we wonder through Scripture. Our Father’s lavish love baths our minds so that we will be refreshed and ready to serve others. Blessings to all.

  1. We have friends originally from Minnesota, now going back to Florida to sell one of their rentals then return. The day after thanksgiving together we planned that the guys Mike, Carter and Francisco would come over to watch a WW2 movie, so i got up early and decorated the entire casa for Christmas! They were so surprised, we served pizza and popcorn, then walked to the village Gelato parlor for a sugar free delight with a lake view. I sent you a link to Hoyle Holidays from my google cloud picture account — God’s plans are always best, even in the back of an ambulance! Sept was the month He drew me deeper than ever before, as I trusted Him with my trembling heart. October was Mike’s bday, Nov our anniversary and thanksgiving for LIFE in Christ, His way! AMEN We are planning to go to the beach for a week during our village nightly firework and music fiesta that celebrates the town Saint Nicolas – We will stay at the Best Western and enjoy some warm weather. Back by Christmas eve —- our little church Xmas party is on Dec 15, and we will depart the next day — just a 2.5 hour drive through beautiful mountains. Our Father GOOD pleasure is that we enjoy all that He has created. Mike and I just read the book of Ephesians as our bedtime story. I love chapter 1-3. PEACE TO YOU and your entire family. God worked a miracle in my body, and I claim full victory in my heart and lungs. AMEN and HALLELUJAH Mike and I are so thankful to have so many prayer supporting friends. May God our Father and the Lord Jesus Christ give you grace and peace. Every time I think of you, I give thanks to my God Philippians 1:2-3 NLT
