  • 2 eggs
  • 1 Teaspoon lemon juice
  • 1/2 Teaspoon vanilla extract

Combine all ingredients in a 4 cup microwave-safe glass serving bowl.  Whisk all ingredients until smooth. Place in microwave and cook on high for 2 minutes, however, open microwave to stir every 30 seconds to fluff all ingredients.  Prepare, refrigerate and serve in same glass bowl.  Before serving, top with fresh strawberries, blueberries and whipped cream made out of real heavy cream. 1. Living in Mexico, shopping for Keto safe ingredients, a store named Super Lake in San Antonio is where gringos can find anything…however, almond and coconut flour can get expensive. Alternate store found in Ajijic right next to Gossips – at the Granera. Bob’s Red Mill brand is great, but for a quarter of the cost, shop at the Granera and stay motivated making pancakes, cheesecakes and yummy treats all on KETO!
