KETO MUG CAKE

mug-cake-microwave-cake-recipe-brownie-red-velvet-mug-cake-1-1024x769Need a chocolate fix?  This takes one minute to whip up, then one minute in the microwave!  Use a coffee mug to bake it in, then simply whip up your favorite KETO icing.  This recipe has chocolate cake with a frosty white icing which is perfect for carrot cake too.

CHOCOLATE COFFEE CUP CAKE

  • 1 egg
  • 2 tablespoons unsweetened almond milk
  • 1/2 teaspoon Stevia
  • 1 tablespoon ground almond meal
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • dash salt
  • Instructions for chocolate mug cake

    1. Whisk chocolate cake ingredients together and pour into a ramekin or mug.
    2. Microwave for 1 minute (20 seconds extra depending on your microwave.)
    3. Mix white icing ingredients in small bowl and pour over cake or just add Dairy Free Whipped Cream!

WHITE ICING INGREDIENTS

  • ounces Philadelphia Cream Cheese, cool but soft (1/2 package)
  • ounces salted butter, softened (1/2  stick butter )
  • 1/4 cup Swerve powdered sugar ( omit? add more Stevia )
  • teaspoon vanilla
  • 1 tablespoon stevia,  or stevia drops to taste
    Instructions for white icing:
    1. Beat soft, cool cream cheese until smooth in a bowl using a mixer.

    2. Add Stevia, stir, then add and whip in vanilla until completely incorporated.

    3. Add butter, whip together till fluffy. Adjust sweetness with more powdered sweetener or stevia to taste.

    4. Refrigerate until ready to use. Beat till fluffy before using. Makes approximately 1 cup, enough to generously frost 6 cupcakes. ( store for later )
