Low Carb Pancakes / Crepes: gluten free, low carb Keto recipe

  • 2 large eggs
  • 1 tablespoon water
  • 2 oz cream cheese, cubed
  • 2/3 cup almond flour
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon Stevia sweetener
  • butter and crushed strawberries instead of syrup

Mikey likes his pancakes “The taste is very, very nice” even with sugar free syrup!

  1. Add all ingredients to blender. Start with eggs and water and cream cheese so you don’t have anything get stuck at bottom.
  2. Blend until smooth, scraping down the sides if needed. Let batter sit for 2 minutes.
  3. Heat a non-stick skillet to medium heat. For each pancake, pour 3 to 4 tablespoons of batter onto skillet.
  4. Once you start to see little bubbles form, flip and continue to cook until pancake is browned on each side. Continue until you have used all pancake batter.
  5. Serve pancakes topped with butter and syrup!

Make sure you have a good super fine almond flour, not almond meal. Almond flour is blanched almonds ground into a super fine flour. Costco has almond flour.

  • use blueberries or strawberries instead of syrup
  • skip flour, just use other ingredients makes a crepeamazing-keto-weight-loss

  1. Pure Monk™ (Monk Fruit or Lou Han Guo) powder is a 100% pure, all-natural, virtually no-calorie sugar substitute, derived from the goodness of real fruit. Monk Fruit is a natural, healthy, Keto safe, flavorful alternative to table sugar and unhealthy chemical sweeteners such as aspartame. Monk fruit has been used for hundreds of years as a natural sweetener and as a traditional medicine in Eastern cultures, monk fruit extract is derived from a small, subtropical Asian melon. Also known as lo han guo, this fruit extract delivers a clean, sweet flavor, with no aftertaste. No wonder it’s been used in its native China for hundreds of years!

On A Diet? No Problem this is, gluten free, Paleo, Keto, diabetic safe, and delicious!!

    About Julian Bakery’s Pure Monk™

Monk fruit extract is potent—about 100-250 times more intense than table sugar. So, you won’t need much, which saves you money!
Pure Monk is a 100% pure extract powder. This is important since many commercially marketed lo han guo-based sweeteners blend monk fruit with unhealthy fillers or sugars, such as such as dextrose (which is a corn-derived carbohydrate—not good!), sugar (yes, actual sugar!) or molasses.

    How to Use Pure Monk

You can blend Pure Monk powder directly into liquid, or sprinkle it over any food that needs an extra blast of sweetness. It’s simple to use, and fits perfectly into a Paleo lifestyle!

  3. Living in Mexico, shopping for Keto safe ingredients, a store named Super Lake in San Antonio is where gringos can find anything…however, almond and coconut flour can get expensive. Alternate store found in Ajijic right next to Gossips – at the Granera. Bob’s Red Mill brand is great, but for a quarter of the cost, shop at the Granera and stay motivated making pancakes, cheesecakes and yummy treats all on KETO!
