
Pickle Pot Roast
Uniquely flavored with pickle, this pot roast will delight all your senses. Plan to have guests tomorrow….simply place all ingredients in the crock pot, turn on at 9PM on low, and wake up to the aroma of home cooking. Serve with a crunchy, appetite pleasing KETO Broccoli Salad
- Beef Chuck Pot Roast
- 3 cups of pickle juice
- 1-2 cups beef broth
- one white onion
- Seasonings a sprig of fresh rosemary and thyme. The juice from half a lime, maybe 2 tablespoons of Tony Cachere’s Cajun Seasoning or Montreal Steak blend.
- Spray the inside of the slow cooker with non-stick cooking spray.
- Add the roast beef to the crockpot and pour the pickle juice over the top of it. Add a few dill pickles and less juice if you like, just add more beef broth.
- If the water/juice doesn’t come up at least halfway covering the beef, add beef or chicken stock. Liquids should cover at least half of the roast. With two roasts in the pot , add more liquid stock.
- Now sprinkle your seasonings on top of the beef roast.
- Set the slow cooker to cook on low for at least 8 hours. Set up at night before bed, or in the morning for a happy home cooked dinner. Amazing tender pot roast!
