Mung Chicken

What in the world? Yes, Mung bean noodles with chicken sauteed with yellow bell peppers! Easy and yummy for those who are on a restricted Kidney Keto diet. Weird, while on a diet to preserve kidney function, red bell peppers are an absolutely NOT, while yellow bells peppers and yellow cherry tomatoes are ok. It tastes great and my taste buds are adjusting nicely.

Ingredients:

  • 1 bale of Mung Bean (Package has 4)
  • 1 no skin chicken breast
  • 1 small yellow bell pepper (not red, not green)
  • 2 Tbsp Parsley flakes
  • 1 Tbsp of Maggi
  • 2 Tbsp of heavy whipping cream
  • 1 Tbsp Mrs DASH no salt seasoning
  • Dash of salt (if on low sodium salt diet)
  • 1/4 cup freshly grated parmesan cheese
  1. Boil water add bale of Mung bean ( 3 minutes) then drain and cut
  2. Saute chicken breast chunks in olive oil
  3. Sprinkle Mrs Dash, Salt onto chicken
  4. When browned, add Maggi and cream and stir
  5. Add drained, cut Mung beans into Chicken and stir
  6. Add parmesan cheese and ENJOY
