St Paddy’s day does not need to pad your mid section, in fact these mint flavored cheesecake muffins have a wee bit o dark chocolate for only 2.5 net carbs per paddy cake. Great with a KETO bulletproof COFFEE in the mornin!
INGREDIENTS for mint flavored cheesecake muffins:
2 1/2 packages of Philadelphia cream cheese
1/4 cup Stevia
1 teaspoon baking powder
1 teaspoon dry mint, or mint extract
2 pieces of unsweetened dark chocolate – click picture for larger view
- Melt one tablespoon butter in ramekin for 30 seconds – drizzle melted butter in bottom of muffin liners, then drizzle almond chips into bottom of muffin liner.
- Preheat oven to 350 degrees — Bake for 25 minutes
- Make dough by adding all ingredients in mixing bowl, except the chocolate.
- Dough consistency is moist like a cake, chip chocolate and drizzle on top of the muffins. Dough enough for 12 muffins and one small cheesecake.
