St Paddy’s day does not need to pad your mid section, in fact these mint flavored cheesecake muffins have a wee bit o dark chocolate for only 2.5 net carbs per paddy cake. Great with a cup of coffee with heavy whipping cream in the mornin! The day commemorates Saint Patrick and the arrival of Christianity in Ireland as it celebrates the eternal inheritance that all saints share through Jesus Christ, Lord of all.
INGREDIENTS for mint flavored cheesecake muffins:
2 1/2 packages of Philadelphia cream cheese
3 eggs
1/4 cup Stevia
1 teaspoon baking powder
1 teaspoon dry mint, or mint extract
2 pieces of unsweetened dark chocolate –

- Melt one tablespoon butter in ramekin for 30 seconds – drizzle melted butter in bottom of muffin liners, then drizzle almond chips into bottom of muffin liner.
- Preheat oven to 350 degrees — Bake for 25 minutes
- Make dough by adding all ingredients in mixing bowl, except the chocolate.
- Dough consistency is moist like a cake, chip chocolate and drizzle on top of the muffins. Dough enough for 12 muffins and one small cheesecake.

I keep the cupcakes in a covered dish in the fridge. Zap for 30 seconds, top with a squeeze of canned whip cream and enjoy with an Irish coffee! Happy St. Pat’s day.
