KETO SHORT RIBS

68lxMPE1QECpWW2Lb243_instant-pot-boneless-short-ribs-3280This is a fantastic crock pot recipe!  WOW your family or guests with a short rib dinner that includes a rich sauce over a premade KETO CAULIFLOWER MASH and a spinach salad. Ask your butcher for short ribs with the bone in them. All ingredients for the short ribs entered into Fitness Pal, nutrition at the bottom.

INGREDIENTS FOR CROCK POT SHORT RIBS

  • 3 pounds bone-in beef short ribs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1 bay leaf
  • 1 large onion, cut into 1/2-inch wedges
  • 3 tbls butter
  • 2 tbls minced garlic
  • 2 cups beef broth
  • 2 cups red wine
  • 2 teaspoons coconut flour mixed with 3 tbls cold water at the end of recipe.

DIRECTIONS

Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. Add 2 cups of broth and bay leaf to crock pot. Add onions to same fry skillet with 3 tablespoons of butter. Cook and stir over medium heat 8-9 minutes or until onions are tender. Add garlic and wine to cooked onions and stir 1 minute longer. Bring to a boil; cook 8-10 minutes or until wine liquid is reduced by half. Add to slow cooker and cook, covered, on low 6-8 hours or until meat is tender.  Remove ribs and keep warm. Transfer cooking juices to a small saucepan; skim fat. Discard bay leaf. Bring juices to a boil. In a small bowl, mix coconut flour and water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened. If desired, sprinkle with additional salt and pepper. Serve with ribs and your favorite vegetables. Yield: 6 servings.

Serve with a MASH of cauliflower, use sauce for gravy!  YUM
