A crock pot full of cauliflower florets, heavy whipping cream, bacon bits and cheese is a perfect way to prepare to have a READY-TO-GO side to whatever meat dish you may make during the week.
INGREDIENTS FOR A CREAMY MASH potato substitute
1 whole LARGE cauliflower head cut up
1/2 whole white onion diced
1 cup heavy whipping cream
1 cup sour cream
1 cup shredded cheese (cheddar or mozzarella)
1 cup chicken broth
1 tablespoon all seasonings
1 stick real butter ( melted in microwave before adding)
AFTER 2 hours cooking, add 1/2 pkg of Philadelphia cream cheese to pot
DIRECTIONS
Place all ingredients except the bacon and green onion into a large bowl and stir before adding to crock pot. Cook on high for 2 hours, stir it up, add 1/2 pkg Philadelphia cream cheese, and maybe 1-2 tablespoons of coconut flour to thicken (depends on the size of the cauliflower you used) cook for another 2 hours, or until texture desired. Take out of crock pot and use hand mixer to make it like mashed potatoes. Add salt, pepper to taste and garnish with green onions and bacon bits, maybe a dab of sour cream on your serving. You must calculate the extra carbs for the garnish used. SEE BELOW nutrients.

NOTE: I added one McCormick “French Onion Dip” seasoning mix when mashing. YUM! Bottled it up and froze many individual servings, just set out the day you want MASH with whatever meat dish you are making. Nutrition calculated on SparkPeople.
