
For diabetics or folks with troubled kidneys, the Nephrologist suggests limited carbs, sugar, red tomatoes, and pasta. GOOD NEWS is that this recipe is made with Cauliflower pasta noodles!
- olive oil1 tbsp
- cherry tomatoes (yellow)12 oz
- garlic (minced)4 clove
- asparagus (1-inch pieces) 8 oz
- shredded carrots 1/2 cup
- CAULIPOWER – Cauliflower Elbow noodles 1 package
- Bell pepper thinly sliced
- fresh basil (thinly sliced)3 tbsp
- zucchini ( 2 finely sliced)
- Green onions diced 1/4 cup
- walnuts (chopped)2 tbsp
- Mayonnaise ( 2 Tbsp)
DIRECTIONS: Boil water, add asparagus, cook for 1 minute, then add elbow noodles, cook until noodles soft, rinse in cool water, set aside. Add olive oil to skillet, when hot, add sliced cherry green or yellow tomatoes, diced onions, bell peppers, seasoning and garlic. PREPARE SALAD: Mix noodles with skillet items. Add thinly sliced zucchini, fresh basil, sprinkle chopped walnuts. Swirl in MAYO and put in fridge. Before serving dust with grated fresh parmesan cheese. ENJOY walking in divine HEALTH
